Did you know that we cannot capture the scent of lilacs in an oil to be savored all year, as there is no true lilac essential oil?

 

These tiny flowers are here for a brief time to make our spring days even more beautiful, but the memories they create stay with us forever. With these delicious lilac popsicles you can savor these wonderful flowers all year long and enjoy not only their flavors, but their scents and all the violet, pink or occasionally indigo hues of their petals.

Ingredients:

3 tbs of honey or your choice of sweetener

1 cup of lilac blossoms (not the green ones, they taste bitter)

zest of 1/2 grapefruit

1 tbs grapefruit juice (preferably fresh)

1 liter mineral water/spring water

1/4 tsp butterfly pea flower powder for the color (optional)

 

Directions:

  1. Gently place your lilacs in a mason jar. Make sure to remove the flowers from the stems and the green bits as these can turn the flavours quite bitter.
  2. Cover the blossoms with mineral or spring water until the jar is full.
  3. Put on the lid and shake the jar before placing it in the fridge for 24 hours.
  4. When ready, mix honey with the grapefruit zest and juice in a small bowl.
  5. Remove the lilac water from your fridge. If the scent is strong and full, give the flowers a good squeeze. If not, place it back in the fridge for a couple of more hours.
  6. Mix the lilac water with the butterfly pea flower powder if you’re using it.
  7. Stir in the honey-grapefruit mixture in the water, too.
  8. Pour the water into popsicle molds and add a few flowers as well.
  9. Freeze until they are set.
  10. Enjoy with your inner child!
